Max’s History
A Stanford-educated teacher named Maximo Gimenez opened the first Max’s Restaurant shortly after the end of World War II in 1945. Gimenez made friends with the American occupation troops stationed in Quezon City, who frequently stopped by Maximo’s house for drinks. When the soldiers insisted on paying for the food and drinks, Maximo decided to open a café where the men could be served meals. At 21 South F Street (now Scout Tuason), Brgy, first opened a restaurant. In Quezon City, in Laging Handa.
Gimenez started a café that initially served chicken, steak, and beverages. Along with his wife Mercedes, his sister-in-law Felipa Serrano Sanvictores, his niece Ruby, who oversaw the kitchen, and her husband Claro were present. Ruby oversaw the kitchen and developed a chicken recipe well-liked by the city’s GIs and later by the general public after they learned of Ruby’s creation.
Max’s Restaurant later opened locations in Metro Manila, Luzon, and Cebu, as well as in the United States, Canada, Kuwait, and the United Arab Emirates, with further locations planned in other nations.
