In 2002, Casa Verde opened its doors for the first time in a modest restaurant on the ground floor of an ancestral home in Cebu City that had been constructed in the early 1900s, close to Ramos Street. At the time, the building housed surrounding dorms and universities. After over a decade of being overseen by its current general manager, Brian Noel, the canteen expanded to the point where it currently has two locations in Manila and four in Cebu.

After the cafeteria had been open for business for a few months, the local office workers and students began to frequent it, and this clientele eventually became the canteen’s primary customer base. In a recent interview, Brian, who is 34 years old, revealed that his family began the business with items that required less time in the kitchen, such as chicken and nothing. It was because no one in the family had experience managing a restaurant.
