In 1946, Eikichi Nishino developed Botejyu in the gastronomic city of Tamade, located in the prefecture of Osaka. The restaurant’s name, Botejyu, was inspired by the rhythmic sound of okonomiyaki being cooked in the kitchen. The first half of the name, “BOTE,” comes from flipping the okonomiyaki, and the second part, “JYU,” comes from the sound of it sizzling on the teppan grill while it cooks. Since opening its doors more than seven decades ago, immense satisfaction was taken in maintaining the restaurant’s original moniker.

Botejyu is very particular about every item that goes into the meals because of being an okonomiyaki specialty restaurant representing Japan. “Crisp on the outside, light and fluffy on the inside” describes how they conduct business. This batter was perfected over several years of research and development. This batter is prepared by combining premium flour, which has been finely milled, with a natural broth, which contains squid, shrimp, bonito, and kelp. Because of this unique batter, it is more flavorful, aromatic, and crisp okonomiyaki.
