Dwight and Dolores Salcedo built their kiosk in November 1985, when the Lechon Manok craze swept the country. They pooled P5,000 from their savings and borrowed another P5,000 from their parents. In honor of Dolores’ hometown of Baliwag, Bulacan, they named it Baliwag Lechon Manok.
They have expanded their menu to include beloved items like liempo and chicharon. Additionally, they have increased their food business to include dining establishments and fast food joints.
Nearly 25 years after it was founded, and, God willing, for decades more, Baliwag has become one of the most recognizable Filipino brand names thanks to the couple’s straightforward and practical management of their company.
Why the name “Baliwag”?
Dolores, who was born and raised in Baliwag, Bulacan, thought that the mention of her hometown brought to mind images of authentic Filipino cuisine and hospitality. “The business just might have a good chance of succeeding,” she said, “if the name can have that same effect on the average Filipino. ”.
How did the recipes come about?
Due to a lack of extra cash to hire celebrity chefs, the couple asked Boy, Dolores’s cousin, who was skilled at making Filipino food, for assistance in developing the initial recipes for the Lechon manok, liempo, and sauce. The original recipes were then tested on the picky palates of Dwight and Dolores’ parents, brothers, sisters, cousins, former schoolmates, and coworkers. For each reasonable comment and criticism, the recipe was slightly modified.
Nearly 25 years after it was founded, and, God willing, for many more years to come, the couple’s straightforward and practical business practices have allowed the company to stand and become one of the iconic Filipino brand names.
