Bacolod Chicken Inasal History
One of the fastest-growing restaurant groups in the Philippines, Bacolod Chicken Inasal aspires to carry on the long-standing Filipino tradition of serving delicious meals that leave diners with fond recollections of their time there. We are a casual dining restaurant franchise with a Filipino flair, serving various popular Filipino meals and specializing in the savory chicken barbeque known as “chicken inasal”.
In 1976, the Cajili family of Bacolod City, Negros Occidental, Philippines, opened Bacolod Chicken House, where they began serving the regional specialty inasal. The province’s signature dish is “inasal,” or barbeque. The family perfected their unique marination to give it a one-of-a-kind flavour.
Rose, Bing, and JM Tanalgo, three siblings, founded the company in 1993. It all started with a humble stand in Mandaluyong, where people could buy food and enjoy it whenever it suited them. A year later, a proper restaurant with seating was constructed for the customers. Five years after its founding, a second location was established in Makati to accommodate the growing demand for their specialized offerings among the residents of Metro Manila.
In 1997, a Cajili family member and his best friend opened the first Bacolod Chicken Inasal restaurant on Pedro Gil in Manila, using the knowledge and experience of the Cajili family business. She felt that this was the perfect spot to introduce the metropolis to the unique cuisine of Bacolod. Dedicated to maintaining its high standards of food presentation, the company expanded to its current 12 restaurant franchises in Metro Manila.
