Amici offers Italian cuisine that is both traditional and uniquely Filipino. Entrance murals feature whimsical depictions of well-known Italian dishes. When patrons go inside Amici, they should get a taste of Italy. The restaurant’s chair designs and other decor elements reflect this as well.

Chef de cuisine at Amici, Paolo Moran, spent a year honing his skills in Italian restaurants in Florence and Sicily. He now works in the Amici kitchen, prioritising using only the freshest ingredients to achieve a genuine Italian taste. Chef Paolo is the brains and brawn behind the new menu items at Amici, and he wants to share his enthusiasm for delicious food with the world.

Amici History

The Italian priest Fr. Gianluigi Colombo of Don Bosco Technical Institute in Makati started a group called Amici (literally translates to “friends”). Before the Morans bought it in 2007, it served as a cafeteria for Don Bosco’s pupils and staff.

The cuisine has been updated and made more accessible to the Filipino market with the help of Italian chefs and recipe experts. Chef Paolo Moran oversees Amici’s current menu.

Fr. Gianluigi Colombo, an Italian Salesian priest in charge of the Don Bosco Printing Press, was permitted by Don Bosco management to establish a “canteen” to provide for the needs of the press’s employees, giving rise to the organisation now known as Amici di Don Bosco (Friends of Don Bosco).

The canteen first served Italian coffee and gelato and then added pizzas prepared in a wood-burning oven and fresh pasta. After some time, Fr. Colombo’s kitchen became a haven where weary “souls” could find solace in the food. Patrons from all across Metro Manila heard about the fantastic Italian food being prepared and served by priests and “ordinary people” inside a canteen, and word quickly spread. Amici di Don Bosco started small, but its pizza, spaghetti, and gelato quickly gained national renown.
